Ensalata Caprisi

A refreshing and satisfying summer salad, quick and easy to make. Two good sized servings, about 150 calories each.

2 roma tomatoes, cubed
2-3 scallions or green onions, diced
2 oz. low-fat mozzarella, diced 1/2 clove garlic, crushed
2 tbsp. olive oil

Mix and let sit for a few minutes.
